Vegan Spinach Artichoke Quesadillas

Two favorite snacks ar combined into one with these vegetarian Spinach Artichoke Quesadillas. These ar ooey, adhesive and super delicious.
I recently shared my instruction for Baked Spinach Artichoke Dip.

I love creating that instruction for parties, however since it makes enough for 8+ individuals, it isn’t one thing I will create all the time…

otherwise i'd eat the entire issue myself.

So, i started painful my brain for a instruction that might have constant flavors however in an exceedingly single serving.

Which is however these quesadillas were born.
As with the dip, the key to creating these quesadillas creamy and delicious is vegetarian cheese (I get mine at merchandiser Joe’s) and marinated artichoke hearts.

You could use plain artichoke hearts, however the marinated ones simply add another layer of flavor.

Vegan Spinach Artichoke Quesadillas
Prep Time two minutes   
Cook Time eight minutes   
Total Time ten minutes   
Servings two -4

  •     1/2 tsp. olive oil
  •  one ail diced
  •     6 oz. marinated artichoke hearts diced
  •  three cups baby spinach separated
  •     4 oz. vegetarian cheese
  •     2 tbsp. vegan mayo
  •     salt and pepper to style
  •     red pepper flakes optional
  •  two giant flour tortillas


   1. Heat oil in an exceedingly pan over medium heat. Add garlic and sauté for one minute, stirring ofttimes. Add artichoke hearts and a couple of cups of baby spinach. Stir to mix and cook till spinach begins to wilt. Add cheese, mayo, salt, pepper and red pepper flakes to pan and stir to mix. Heat through and put aside.

   2. Place an oversized non-stick pan on the stove over medium-high heat. Place one hotcake within the pan and fill with half the spinach artichoke mixture and an extra 1/2 cup of baby spinach - ensuring to stay mixture on one half the hotcake. Fold hotcake in [*fr1] and cook till bottom begins to brown (approx. 2 minutes). Flip and cook till different aspect is bronzed still. take away from the pan and repeat with remaining ingredients.

   3. Slice and enjoy!
